Meet our Chefs!

Josh Simpson
From a young age Josh grew up around food. Starting out working for his uncle John’s catering company, it was obvious he possessed an inherent passion for the culinary arts. Climbing the rungs from dishwasher to Sous Chef, Josh decided to take his talents to Boulder, CO in the summer of 2004. There he got a chance to test his hand at creating vegan and vegetarian cuisine with an appreciation for local, organic, ethically harvested food. Eventually, he ventured to the Pacific Northwest, and in 2009 he took the opportunity to work as Sous Chef for Tasty Thai in Eugene, OR mastering traditional Thai cuisine. Continuing to advance in his career Josh earned the honor of being Head Chef at Ratatouille, a classical French restaurant that constructed vegan, vegetarian and raw food.
Josh looks at the sustainability and balance each ingredient possesses. That said, he feels at home at Mint Tea being given the opportunity to create fun, new and innovative dishes, showcasing his repertoire of talents and relishing new challenges.

No matter the culture, food is what binds relationships. Mint Tea offers a casual dining experience with a healthful, international approach.

Visit our Bistro during the week days for lighter breakfast options and a full lunch menu. On the weekends come for an all day brunch offering. Our menu is designed to change with the season, using fresh, local and in-season ingredients. Look for baked goods, warm cereal, fresh fruit, and varying egg dishes to get your morning going. At lunch we have a rotating menu of soups, salads, sandwiches, rice and pasta bowls with gluten free and vegetarian/vegan options always available.
